8 Healthy Recipes

When the words "eating healthy" pop into your mind, what is the first thing you think of? I asked a few people this question and the responses I got were tasteless, flavorless, expensive, and not filling. To be honest, before my fitness journey, some of these words would pop into my mind as well. However, it was not until I started to experiment with different foods and work around a budget, that my perspective completely changed. If any of these words popped into your mind, I am here to change your mind completely. All of these recipes are budget friendly, delicious, and filling. Feel free to take any recipe you like, try it, and let me know how it was! Eating healthy does not have to be boring. It can be colorful, fun, and amazing for your body.


1. Pecan Crusted Chicken Breast side of Sweet Potato and Salad

- Use a fork to poke various holes all over the sweet potato

- Place sweet potato in the oven at 350 degrees for 50 minutes

- Grab your chicken breasts, dip in flour, then egg, then in bread crumbs mixed with pecans

- Cook chicken over stove top on medium heat until ready

- Get side salad mix ready (whichever you prefer). The salad pictured has spinach, croutons, cheese, and Catalina dressing.

- Once done, take sweet potato out, cut slit down the middle, add brown sugar and Can't Believe It's Not Butter.

- Enjoy!


2. Stuffed Bell Peppers side of Black Beans

- Get 90% lean ground turkey, season with Season-It-All

- Cook over stove top on medium heat until ready

- Cook whole grain brown rice over stove top

- Wash your bell peppers and then slice the top off

- First layer to go into the bell pepper will be rice, second layer will be ground turkey, topped with cheese

- Place stuffed bell peppers in oven at 350 degrees for 30 minutes

- Cook black beans in microwave for 3 minutes

- Bon Apetit!!


3. Shrimp Salad

- Pour your salad mix into your bowl

- Add sliced tomato

- Add croutons

- Add sliced carrots

- Add avocado chunks

- Grab your shrimp, season with salt, pepper, onion powder, garlic powder, and Old Bay seasoning

- Add butter to skillet and cook over stove top medium heat

- Add shrimp to your salad bow and select the dressing of your choice

- Delicious!!

4. Taco Bowl

- Get 90% lean ground beef, season with taco seasoning mix

- Cook over stove top, medium heat

- Once done, add in a can of corn and can of black beans

- Get microwavable packet of whole grain rice and add in to the skillet with the corn, black beans, and ground beef

- Mix around on medium heat for about 10 minutes

- Pour finished product into bowl

- Top with light sour cream, jalapenos, and shredded cheese

- Simple and quick!

5. Stuffed Shells side of Broccoli

- Cook jumbo shells as instructed on box

- Once cooked, drain the shells and rinse with cool water to stop the cooking process

- In a bowl, put ricotta cheese, mozzarella, salt, pepper, and mix them all up

- Grab a shell and add spoonful of the mixture into each

- Spread marinara sauce on the bottom of a baking dish

- Place shells on baking dish over the marinara sauce

- Pour the remaining marinara sauce over the shells

- Bake the shells 30 mins at 350 degrees

- Microwave a pack of broccoli and add to your plate

- That's it!

6. Buffalo Ranch Chicken Quesadillas

- Grab rotisserie chicken and shred the chicken apart

- Place shredded chicken in a bowl

- Add low-fat shredded cheese, light ranch, and hot sauce to bowl

- Mix these ingredients around using your hands

- Once thoroughly mixed, grab your wheat tortilla(s) and place on skillet

- Heat each side for 2 minutes on medium heat

- Add the buffalo ranch chicken mix into the tortilla and fold in half

- Cook each side for 2 additional minutes

- Sprinkle parsley over finished product

- This will be your new favorite!


7. Spinach Artichoke Stuffed Salmon side of Asparagus and Wheat Mac 'n Cheese

- Grab a pack of frozen salmon and cook as instructed

- Meanwhile, cut your asparagus up and saute in skillet over medium heat for roughly 10 minutes

- Get a box of wheat mac n' cheese and cook as instructed

- Once salmon is done, cut a slit down the middle, be careful not to go completely all the way

- I typically buy spinach artichoke dip already made from HEB and add a spoonful of the dip into the open slit in the salmon

- Put everything onto your plate and let me know what you think!


8. Taco Salad

- Pour your desired salad mix into a bowl

- Get 90% lean ground beef, season with taco seasoning

- Cook over stove top, medium heat

- Add sliced tomato over your salad mix

- Add low-fat shredded cheese

- Add jalapenos

- Add avocado chunks

- Once the ground beef is cooked, add it over your salad mix

- Pour the dressing of your choice over your salad (I highly recommend jalapeno ranch dressing!)


These are 8 of my all time favorite and quick go-to healthy recipes! I found that eating right and being creative in making healthy foods fun and enjoyable was the key in my weight loss journey and also helped with maintaining a better and healthy lifestyle for myself.
