8 Healthy & Quick Lunch Ideas

If you are in need of some healthy and/or quick lunch ideas, I got you covered! Lunch can be tricky. We are either rushing with a 1 hour work break, unsure what to make, pressed for time, or just want something light and quick. Look no further, down below are some of my quick, easy, and favorite healthy go-to lunch ideas. Also, the harsh truth about eating healthy is that most of the time, it doesn't fill you up for long. You might find yourself getting hungry again within a couple of hours. However, these recipes are sure to be filling and if you worry that it might not be, simply make yourself a slightly bigger serving. Here we go!

1. Taco Spinach Wrap

- Grab a skillet and start cooking your 96% lean turkey ground beef, add in taco seasoning packet

- Get a can of black beans, put in a bowl and microwave for 2 and a half mins

- In a separate skillet, start heating up the spinach tortilla wrap

- Once heated, add in the turkey ground beef, lite sour cream, some black beans, jalapenos, shredded cheese, and lettuce


2. Chicken Salad Salad

- Boil an egg

- Get a can of shredded chicken breast put it in a microwave safe bowl and microwave for 3 mins

- Let the shredded chicken breast cool down for 5 mins and then add lite mayo, celery, and the boiled egg chopped up. Mix these ingredients

- In a separate bowl, prepare your salad to your liking

- The salad pictured has shredded carrots, avocado, tomato, and thousand island dressing

- Pour your chicken salad over your salad

- Add crushed wheat crackers over the chicken salad

3. Olive Garden Inspired Toscana Soup

- Slice up a red potato, slice up a large onion

- Strip Kale leaves off the stem, Slice turkey bacon into pieces

- Add avocado oil to skillet and bring to medium heat

- Add turkey sausage to skillet until cooked

- Remove sausage and put to the side

- In same skillet, cook turkey bacon with the chopped onion until cooked (The juices help season this)

- Add potatoes, sausage, onion, & bacon to your pot

- Add chicken broth until potatoes are submerged

- Bring soup to boil, once at boil, turn heat to low and simmer for 20 mins

- Add 3 cups heavy cream to the soup, & add the kale

4. Honey Glazed Shrimp

- Grab a handful of frozen shrimp and put to defrost.

- Once defrosted, put the shrimp in a bowl

- Add 2 tbs of soy sauce and 3 tbs of honey

- Mix around to make sure all shrimp is coated

- Place your shrimp in a skillet over medium heat

- While this is cooking, get your pack of whole grain rice and cook in the microwave for instructed time

- Once rice is done, take it out and put your pack of broccoli into the microwave for instructed time

- Put desired amount of broccoli and rice onto your plate

- Once shrimp is done, put it over your rice and drizzle honey over it.


5. Turkey Chili

- Put avocado oil over your skillet and bring to medium heat

- Put your ground turkey on the skillet and cook

- Once cooked, put your chili packet over the ground turkey meat

- Open a can of red kidney beans and add to the skillet

- Open a can of diced tomatoes and add to skillet

- Add 1 cup of water to skillet

- Mix these ingredients around

- Bring to a boil then let simmer for 10 mins

- Put desired amount of chili in a bowl

- Add lite sour cream, avocado, & shredded cheese

6. Lettuce Wraps

- Put avocado oil over your skillet and bring to medium heat

- Put your lean ground beef on the skillet and cook

- Season with Season-It-All and/or Uncle Chris'

- Once cooked, let lean ground beef cool down for 10 mins

- Grab your lettuce scoops (2) and put on your plate

- Put desired amount of lean ground beef on lettuce scoop

- Top with sliced avocado, sliced cherry tomatoes, shredded cheese, jalapeno, and guacamole sauce

- Optional side: Black beans and/or whole grain rice


7. Buffalo Chicken Dip

- Get a can of shredded chicken breast and place in a bowl

- Microwave shredded chicken for 2 and a half mins

- Once ready, in that same bowl, put 3 or 4 tbs of your favorite mild or hot sauce and mix around

- In the same bowl, add 1 package of fat free cream cheese

- Put bowl back in microwave for 2 minutes or until cream cheese is softened

- Mix these ingredients around evenly until all is blended well

- Eat with your favorite baked chips or wheat crackers


8. Veggie Stir Fry

- Slice a chicken breast up into chunks

- Put avocado oil over your skillet and bring to medium heat

- Cook chicken breast chunks over skillet, season with minced garlic, salt, and pepper

- Add in the Asian Stir Fry Blend vegetable package that can be bought at H-E-B

- Add in bamboo shoots

- Mix around until all is cooked

- Add in stir fry seasoning mix (also bought at H-E-B)

- Add in desired amount of stir fry sauce

- Mix around until all is mixed well

- Optional side: White rice and/or lo mein noodles
